Tomato and Basil soup

Ingredients:

500g fresh tomatoes

1 tablespoon crushed garlic

1 onion quartered

250 ml red wine

1 can of whole tomatoes

250ml cream or coconut milk

250ml tomato juice

Had full of fresh basil/15ml basil pesto

15 ml sugar

Olive oil


Method:

1. Quarter the tomatoes and onions.

2. Drizzle with olive oil and garlic and grill in the oven.

3. In a pot add wine, sugar, canned tomatoes and grilled tomato and onion mix.

4. Boil for 10 minutes.

5. Add the cream or coconut milk, tomato juice and boil for 5 more minutes.

6. Add the basil.

7. Blend and serve.
